OUR CUISINE

"In the kitchen all symbols and materials find refuge: this is a place of composition, quiet, coherence and pleasure. And yet there is more. Everyone knows that the kitchen is a privileged place for the weaving of relationships. But it's even a place of daily polical gestures. My every act of eating and preparing food has surprisingly far-reaching consequences. I ask myself: how much peace and how much war does my plate contain? How many people have been starved and how much land destroyed to fill my plate? How much does my plate connect me to, or distance me from other living creatures (plant and animal) and the Earth's breathing? Considerations which I hope come through the vapours from the pots and pans of my kitchen. I cook also with joy. The seasons of the year bring colours and scents which lead to the creation of our dishes."

Guests at Aghe know they'll find fresh local food, organic when possible, or from our own organic garden, combined with harmony, variety and balance. We cook grains, legumes, vegetables, meat and fish while trying to satisfy people's habits and needs. Saturday evenings we only offer "veggie" (vegetarian and vegan) dishes, to give those who are not used eating this way, a chance to experience the pleasures and benefits of vegetarian gastronomy, and to celebrate along with those who have made the choice to be vegetarian.


"Io oggi mangio all'Aghe!" ("Today I'm eating at Aghe!")

is the name of the vegetarian dinner that we prepare Saturday evenings for our guests as well as for anyone else who wants (by reservation only, thank you). For groups from 8 to 20 people we prepare vegetarian meals other evenings of the week by special request (we need at least two days advance notice).
